Cook 9 noodles (or whatever amount needed depending on your dish size).
Mix together in a large bowl: stir fried vegetables, garlic, ricotta cheese and the eggs.
Lightly oil bottom of the lasagna dish.
Begin by placing one layer of noodles followed by some of the ricotta mixture, sprinkle with the mozzarella cheese, add another layer of noodles followed by some of the ricotta mixture, sprinkle with the mozzarella cheese, etc.
Finish with a layer of noodles and top with the remaining mozzarella cheese.
Bake at 375 for 20-25 minutes.
