|Mixed Vegetable Curry

Fry chopped onions in the Habib cooking oil till they are light brown for 6-7 minutes.
Then add the diced tomatoes and make a thick paste.
Make sure the vegetables are washed and cubed, and then add them to the tomato paste.
Add the spices and mix them thoroughly with the veggies, allowing them not to break.
Put half a cup of water and let the veggies cook on low flame for approx-20-25 minutes, till they are tender.
When cooked add green chilies and coriander for garnishing.
Serves 6-7 servings
